Date crème brulee

Serves (6 )

75 gr castor sugar
5 egg yolks
2 vanilla pods
50 ml milk
480ml pouring cream
extra sugar to glaze
100gr chopped fresh dates


Pre heat over to 140 degrees
Combine vanilla pods, milk and cream in a saucepan
Gently bring to the boil and then remove from heat
Combine sugar and egg
Add sugar and eggs to vanilla, milk and cream mix
Place dates evenly on bottom of 6 ramekins
Pour mix evenly into each ramekin
Place ramekins into a baking tray filled with water (water bath)
Bake till set, approx. 35-45 minutes
Remove from oven and cool to room temperature

To serve
Before serving sprinkle sugar evenly over each custard mix
Heat under a preheated grill for 2 minutes or until sugar caramelises
Remove from heat and cool 10 minutes
A nice accompaniment is a small blood orange salad and biscotti
